Healthy Shakshuka with Feta

This recipe is perfect for when you intend to cook for multiple people. All the magic happens in a single pan. When your shakshuka is done, simply put the pan on the table and eat from there. I promise you will put a smile on anyone's face after making this!

Ingredients

  • 1 can of peeled tomatoes
  • 1,5 red paprika sliced in pieces
  • 1 small tray of cherry tomatoes
  • 1 onion
  • 2 tbsp ras el hanout
  • 2 tbsp tomato paste
  • 2 tbsp harissa or cayenne pepper
  • 2 garlic cloves
  • 4 eggs
  • A little bit of salt
  • Parsley
  • 40 gr feta

Preparation

1. Heat up a baking pan and add one tablespoon of olive oil. Put the onion into the baking pan and fry them for 2 minutes.

2. Add the paprika and garlic and fry them for a couple minutes.

3. Add the tomato paste and harissa, watch out that you don’t overcook them. After a minute you can add the peeled tomatoes and the ras al hanout.

4. After 3 minutes you can add the cherry tomatoes and eggs. Turn the heat down and put a lid on the baking pan.

5. Check if the eggs are cooked. The egg yolk doesn’t have to be cooked.

6. Add the feta and parsley on the dish.
