Lentil Pasta with Veggies

Ingredients (serves 4-6)

  • 500 gr red lentil pasta
  • 300 ml tomato sauce
  • 2 garlic cloves
  • 1 onion
  • 2 tomatoes
  • Handful of black olives (without a pit)
  • Dried oregano
  • Dried basil or fresh basil
  • Parmesan cheese
  • Olive oil
  • Salt & pepper 

Instructions

1. Dice the garlic and onion and cut the tomatoes in small pieces. Cut the black olives in rings.

2. Cook the pasta accordingly, instructions are on the bag.

3. In the meantime, add olive oil to a pan on low/medium heat. Add your onion and garlic and simmer for 3 minutes. Add mushrooms and cook for another 5 minutes. Poor in the tomato sauce and turn the heat up to medium heat.

4. Add in a teaspoon of oregano, basil and season with salt and pepper. Simmer for 2 minutes and add the olives.

5. Once the pasta is done cooking, add the pasta and a little bit of pasta water to the sauce. Make sure your pan is large enough to fit both the sauce and pasta.

6. Add as much parmesan cheese as you like and cook for 1 minute. And voila, your pasta is done!
