Quinoa and Feta Salad

Quinoa is a super healthy ingredient to use in any salad or recipe in general. Pair this with some feta cheese and you have got yourself a match made in heaven!
Ingredients
  • 100 gr quinoa
  • 1 small red onion
  • 1 red pepper 
  • 100 gr courgette
  • 2 garlic cloves 
  • Zest and juice 1/2 lemon 
  • Flat-leaf parsley, roughly chopped
  • 100 gr feta cheese

Preparation

1. Cook the quinoa following pack instructions, then drain really well and set aside.

2. Heat oven to 200C/180C fan/gas 6. Toss the onion and peppers with 1 tbsp of oil and seasoning on a roasting tray, then roast for 15 mins.

3. Toss the courgettes, union and red pepper with the rest for another 15 mins.

4. Squeeze the roasted garlic cloves out of their skins and mash with some seasoning. Stir in the remaining oil, lemon juice and zest and season with sugar to taste. Drizzle over the quinoa and toss together with the roasted vegetables and parsley.

5. Crumble over the feta, toss gently again and serve.

 

And voila, you're done! You could even make some extra and have it for lunch the next day :)
