Vegetarian Pumpkin Curry

This vegetarian pumpkin curry recipe is incredibly easy to make. It’s healthy, delicious and ready in 25 minutes!
Ingredients (serves 4)
- 800 gr pumpkin
- 1 onion
- 165 gr of Indian curry paste
- 400 ml coconut milk
- 2 tomatoes
- Cashew nuts
- Oil
Instructions
1. Cut the onion and the pumpkin in small-medium sized cubes. Dice the garlic and tomatoes.
2. Add one tablespoon of oil into a large pan and add the onion and garlic on low-medium heat.
2. Add the pumpkin, curry paste and a small amount of water. Let it simmer for 2 minutes on medium heat.
3. Add the tomatoes and coconut milk. Simmer on medium heat for 15 minutes.
4. Sprinkle the cashew nuts on top and serve in a bowl. Optional; enjoy naan bread for on the side and dip it in the curry.
