Vegetarian Udon Noodle Recipe

This veggie friendly udon noodle salad is to die for! It's packed with flavour and I promise you won't regret making this. The fresh udon noodles can be a little difficult to find. Try any Asian supermarket. If you can't find fresh udon noodles, replace them with dried udon noodles or any noodle you prefer!

Ingredients

  • 2 packages of fresh udon noodles
  • 2 garlic cloves
  • 1 onion
  • 150 grams mushrooms (whichever type you prefer)
  • Oil
  • 1 green pepper
  • Cashew nuts
  • Salt
  • Pepper
  • 1/4 cup soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 2 tablespoons sesame oil

Preparation

1. Mix the soy sauce, sesame oil, garlic powder and ginger powder in a bowl and set aside.

2. Chop the onion, garlic cloves, mushrooms and green pepper and add to a skillet on medium heat in oil. Add salt and pepper seasoning. Cook for 5-6 minutes.

3. In the mean time, cook your fresh udon noodles for 2-3 minutes or until soft. If you have dried noodles, check the cooking time on the packaging's instructions.

4. Drain the noodles and add back into the pan. Set heat to low heat and add the sauce mixture along with your cooked veggies. Mix for 1-2 minutes on the heat and take it out of the pan and into a large bowl. 

5. Crush some cashew nuts and sprinkle over the noodles. Add salt and/or pepper if necessary.
